Cannellini Bean Alfredo Sauce Recipe

A couple years ago, I came across a recipe using white beans and a minimal amount of cheese to make a mock Alfredo sauce, and never looked back. In fact, this recipe has become one of my favorites to incorporate into my Eat Beans Every Day Menu Plan !

White Bean Alfredo Sauce. 1/4 cup vegan margarine. 2 cloves garlic, minced. 2 cups cooked white beans, rinsed and drained. 1 1/2 cups unsweetened soy milk. Salt and pepper, to taste. Parsley (optional) •In a sauté pan over low heat, melt the margarine. Add the garlic and cook for 2 to 3 minutes.

It's a great way to use this creamy white bean and fennel that I have been loving so much lately. Cannellini beans have a good amount of protein per serving, about 10 grams, and adds a subtle taste and nice texture the the recipe. Fennel, one of my favorite flavors at the moment, pairs so well with the beans and capers.
