I love to make healthy breakfast scrambles with everything I have in my refrigerator and pantry and often I will add a bit of potato.

4 Eggs. 3 cups sweet potato, peeled & diced. 1/2 cup red onion, diced small. 1 cup red bell pepper, diced small. 1 jalepeno pepper, finely diced. 3 garlic cloves, grated. 1 teaspoon old bay seasoning. 1/2 teaspoon chili powder. 3 tablespoons oil
Add the apples, celery, and sweet potatoes and cook for 5 minutes. Add the stock, water and cinnamon stick and bring to a boil. Reduce heat and let simmer until vegetables are soft - about 30 minutes. Discard the cinnamon stick and stir in the chipotle pepper.
