Last Christmas season I shared a wonderful Peppermint Bark Recipe with you that was great for enjoying during the holidays or also perfect for gifting! Peppermint bark was a hit for quite a few of our guests last year.
The Peppermint Oreo Cookie is a phenomenal cookie because this cookie includes mint, dark chocolate chips, and it’s SIMPLE! Remember, I’m all about making baking easy, so this cookie recipe is up my alley. The Peppermint flavor is NOT strong, which is really nice because I don’t like the mint overpowering the rest of the flavors.
Beginning with the crust, take 2 cups of crushed regular and Golden Oreo cookies and mix it with 1/4 cup of melted butter. Place the Oreo cookies in the body of a blender OR in the body of a food processor and pulse until the cookies are finely ground. Add in the cream cheese, peppermint extract, and espresso powder and pulse until the mixture is completely smooth. Scoop the mixture into 1" balls (using a cookie scoop really helps here).
Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In a large bowl combine the cake mix, eggs, and oil with a mixer. The batter will be very stiff. Pinch of pieces of batter and roll into 1 inch balls. Place 1 inch apart on prepared cookie sheets and flatten slightly with fingertips.

Add dark chocolate chips/chunks to a microwave-safe bowl and microwave in 30 second increments on half-power, stirring after each increment, until melted and smooth.
