Method. Preheat the oven to 200ºC/180ºC Fan/Gas Mark 6. Place a large casserole on a medium heat and sauté the butter, onion, turmeric and cumin for 10 minutes. Add the tomato purée and cook, stirring, for another 2 minutes. Bundle the herbs together and use some string to tie them into a bunch.
In a medium bowl, mix the prawns, shallots, chilli, coriander and cumin seeds, lime zest and juice, olive oil, half the coriander and an eighth of a teaspoon of salt. Spoon this mixture into the pepper halves, drizzle a little oil over the stuffing, then bake for 10 minutes, until the prawns are cooked and golden-brown.
Drain and set aside. Put the butter, onions, and garlic in a large pan and place over medium heat. Cook for 20 minutes, stirring occasionally, until soft and golden brown. Stir in the turmeric, 1/2 teaspoon salt, and some black pepper and remove one-third of this mix from the pan to use later.
Preparation. Scoop out and discard the watery centre and seeds from the cucumber quarters, then cut the flesh widthways into chunky, 2cm-thick pieces. Put the cucumber in a bowl with the garlic, vinegar, lime juice and three teaspoons of flaked sea salt, then mix with your hands, lightly crushing the cucumber pieces as you do so.
