I spotted black pepper tofu on Ottolenghi’s* Instagram last week, a fine place to gush over food. The recipe is from Plenty, an excellent cookbook that I happen to have, which means I could make it right away.However, rather than making it and then still feeling a loose obligation to make a vegetable side dish or salad, I decided to add eggplant.
Eggplant zucchini tofu cream casserole with tomato sauce and nutritional yeast is a delightful, layered vegan recipe, that takes about 30 minutes to prepare and about 40 minutes to cook in a microwave oven, or a little longer in a conventional oven at 350 degrees F. It will serve 6 adults as a main meal.

Spread ¼ cup of the sauce on the pan, then add successive layers in order of eggplant, potatoes, sauce, and half the bread crumbs.
Spoon the eggplant mixture into the large mixing bowl with the parboiled pasta and the tofu ricotta. Then, add the fresh basil, ¼ cup vegan shredded cheese, ¼ cup water and a few cracks of fresh black pepper. Mix everything together. 7. Preheat the oven to 400º F. Grease a 9″ X 13″ baking pan.
Prepare the Eggplant. Whisk broth, soy sauce, brown sugar, vinegar, chili paste and cornstarch together in small bowl. Set aside. Place vegetable and sesame oil in skillet place over medium heat. Add garlic and sauté for 1 minute. Add eggplant strips in a single layer. Cook about 5 minutes, until strips are browned on bottoms.

Then add the cubed tofu and dried basil and sauté gently for a minute or so. Then add in the chopped eggplant and mushrooms, soy sauce and hoisin sauce and stir in. Reduce heat slightly, cover pot and leave to simmer (stirring occasionally) until the veggies are soft. Remove from the heat and stir in the tahini. Add salt and pepper to taste.
Spread a thin layer of marinara sauce on the bottom of a baking or casserole dish. Top with a layer of eggplant slices (see photo). Spoon 1/3 of the vegan tofu ricotta over the eggplant slices and spread into an even layer. Then top with some vegan parmesan cheese (about 2 tbsp), some marinara sauce and another layer of eggplant slices.
