Make small patties/cutlets and shallow fry till golden brown on both sides. Take a wide serving plate.
For assembling Ragda Patties: Place one tikki in a serving plate or you can also place 2 to 3 tikkis/ patties at a time. Now pour prepared ragda over the patties and fully covered it.
1. Wash and soak vatana/dry peas over night. 2. Drain, rinse and pressure cook vatana with water and salt for 2 whistles. 3. Meanwhile finely chop onion, green chillies, tomato and cilantro, keep aside. 4. In a pan or wok heat oil add Asafoetida/Hing, cumin, mustard seeds and allow to splutter.

For making potato patties/ pattice. Combine the potatoes, cornflour, soaked poha and ginger – green chili paste and salt. Also add chaat masala and fresh coriander leaves. Mix well. Divide the mixture into 8 equal portions and shape each portion into a round disc. Heat 3 to 4 spoons of oil in a non stick pan on medium heat.
Shallow fry on a non-stick pan till the patties are golden brown and crisp. How to proceed. For serving, place 2 patties on a plate and pour the ragda over. Top with all the chutneys. Sprinkle the sev and onions on top. Serve immediately. Tips . For crisper patties, use old potatoes or a variety commonly called "chips" or "wafer potatoes".
