Instructions. Chop tomatoes & slice onions. On a medium heat pan, add 1 tbsp olive oil and fry onions & tomatoes until soft. Season with a pinch of salt and pepper. Set aside in a bowl. Clean pan, Add 1 tbsp olive oil. Crack and whisk 2 eggs in a bowl. Add to heated pan.

In a large skillet, heat 2 Tbsp oil over medium heat. Drag one of the eggplants into the hot oil and spoon a tablespoon or two of egg mixture over the top.
