Oil - 1 tbsp. Preparation Method: Peel and cut the yucca root into 1 inch cubes. Add the yucca root , salt and turmeric powder and water in a pan. Add enough water to immerse the yucca root. Now bring this to a boil and cook until the root is nice and tender. Make sure it is not overcooked. Once done use a strainer to drain the water off.

Add the pieces one at a time and fry in low-medium flame. After about 3 or 4 mins turn the pieces over and fry for 4 mins on low-medium flame. Be careful not to break the pieces when turning them over. Once done the fillet pieces will have nice brown color on both sides. Serve hot with steamed rice and a curry like Mango Curry.

Now deep fry till the pieces turn golden brown on all sides. Heat 2 tbsp oil in the same pan and add the ginger, garlic and onions and stir till onion turns golden brown. Add green chillies and stir again. Now add soy sauce,chilli garlic paste and tomato ketchup. Stir well for 3 mins. Now add the fried chicken pieces and mix well.

Cilantro/Coriander leaves- for garnishing. Preparation Method: Heat oil in a pan. Add asafoetida and cumin seeds and wait till the cumin seeds crack. In the mean while blend green chilli,tomatoes and ginger to make a fine puree. Now add the puree to the pan along with sugar,turmeric, coriander,red chilli and garam masala powder.

Mix the cocoa, sugar and cornflour well in a thick bottomed saucepan. Gradually add the milk, stirring to for a lump free mixture. Cook this over medium heat stirring all the while so it doesn't stick to the pan. Once it comes to a boil and becomes thick, take it off the heat and beat in the butter and vanilla.

Place on medium heat while you prepare eggplant. Place dry ingredients in bowl, stir to combine (Can add a little cayenne if you like). In separate bowl, pour buttermilk. Slice eggplant. Dip each slice in buttermilk and then in meal. Place in hot oil and cook, turning once, until browned on both sides.
